EDINBURGH GIN

Distilled in a hand-beaten Scottish copper pot still using thirteen classic botanicals including juniper berries, citrus peel and coriander seed. Edinburgh Gin’s distinctively Scottish character comes from Scottish juniper, pine heather and milk thistle.

Produced in small-batch quantities ensuring that only the finest quality ingredients are used to produce a refreshing clean, crisp gin. At 43% ABV Edinburgh Gin holds the premium gin status.

Edinburgh Gin is batch distilled using two methods; a potstill and a column still. The stills are located in the brand new Edinburgh Gin distillery in the heart of the city. Partnering with the Heriot-Watt University in Scotland, this distillery offers the head distiller and grad student a platform to recreate old Scottish Gin recipes; such as Edinburgh Gin

DON PAPA RUM

Don Papa is a premium aged small batch rum from the isle of Negros Occidental, the Philippines. Distilled from some of the finest sugar cane in the world, Don Papa is first aged 7 years in oak barrels in the foothills of Mount Kanlaon before being blended to perfection.
Negros Occidental is and has always been the sugar capital of the Philippines. Due to the perfect combination of climate, geography and the rich volcanic soil on the island, Negros is ideally suited for sugar cane production.

Light and fruity on the nose whilst smooth and delicate on the palate, the light amber colored Don Papa has a long, rich-textured finish and offers flavors
of vanilla, honey and candied fruits.

Created in 2011 and now ready for consumption in 2012,

BRANDON'S GIN

Brandon’s Gin is an American style gin handmade using a copper potstill, one small batch at a time. What makes this gin special is the mix of botanicals  and the technique to infuse the flavors into the spirit. The botanicals are all natural and carefully selected; juniper, coriander, angelica, cinnamon, lemon peel, orange peel and anise. The botanicals are vapor infused into the spirit during distillation.
Vapor infusion is a method by which the botanicals are placed in a perforated basket and spirit vapors are passed through the basket during distillation. The vapor infusion process gives to gin an amazingly fresh aroma and a wonderful taste, without the juniper overpowering the other botanicals.
After distillation Brandon's gin is bottled by hand with each bottle hand signed and numbered.

THE PAULSEN COLLECTION - FINEST CHACHA

A very unusual spirit, chacha is a kind of Georgian grappa, with this 2007 vintage example being double-distilled in Charente stills by Chateau Mukhrani from the pomace of various local grapes alongside more recognisable names such as Sauvignon Blanc and Nero d'Avola. Chateau Mukhrani 2007 is part of the Paulsen Collection, a range collated and endorsed by the intrepid explorer, philanthropist, scientist and geographer Frederik Paulsen, who has unearthed and personally approved this gem.
